Cauliflower Saute with Lemon
|Olive oil||2 Tablespoon|
|Fresh lemon juice||1 Tablespoon|
Wash the cauliflower and soak it in salted cold water for 1 hour.
Drain, and cut into flowerets.
Cover with fresh cold salted water and cook slightly.
The flowerets should be quite firm.
Heat olive oil in a large skillet and add the drained flowerets.
Saute them quickly, turning to brown on all sides.
Remove to a hot serving dish and season to taste with salt and pepper; add lemon juice.
Makes 4 servings.
