Cheese N Chive Cauliflower
|Cauliflower||1 1⁄2 Pound|
|Shredded reduced fat cheddar cheese||1⁄2 Cup (8 tbs)|
|Nonfat yogurt||1⁄3 Cup (5.33 tbs)|
|Low fat mayonnaise||1⁄4 Cup (4 tbs)|
|Chives||1 Tablespoon, minced|
|Grain mustard||1 Teaspoon|
Trim the leaves and tough stem from the cauliflower.
Place the head right-side up in a 1 1/2-quart casserole.
Add the water.
Cover with a lid and microwave on high for 3 minutes.
Rotate the dish a quarter turn.
Cover and microwave on high for 2 to 3 minutes, or until the cauliflower is just tender.
Do not overcook.
Drain off the water.
In a small bowl, combine the Cheddar, yogurt, mayonnaise, chives, mustard, and paprika.
Using a knife or spatula, spread over the cauliflower.
Cover the casserole with the lid and let stand for 3 to 4 minutes to heat the topping.
