Cauliflower Cheese

Ingredients
  Cauliflower 1 Medium
  Cheese sauce 1⁄2 Pint
  Cheddar cheese 1 Ounce, grated
  Crisp breadcrumbs 1 Tablespoon
Directions

Soak the cauliflower in cold water for about 15 minutes, then break into flowerets.
Cook in a little boiling salt water in a covered pan until tender and arrange neatly in buttered scallop shells or a fireproof dish.
Make the cheese sauce.
Coat the cauliflower with the cheese sauce.
Sprinkle with the cheese mixture, brown under a hot grill or in a fairly hot oven (425°F - Gas Mark 6).
Serve hot.
