Deep Fried Cauliflower

Ingredients
  Cauliflower head 1 Medium, separated into flowerets
  Vegetable oil 1 Tablespoon
  Eggs 2 , beaten
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Dry bread crumbs 3⁄4 Cup (12 tbs)
  Paprika 1⁄2 Teaspoon
Directions

Heat 1 inch salted water ( 1/2 teaspoon salt to 1 cup water) to boiling.
Add cauliflower.
Heat to boiling; reduce heat.
Cover and cook 10 minutes.
Drain and cool.
Heat oil (1 to 1 1/2 inches) to 360°.
Mix eggs, salt and pepper.
Mix bread crumbs and paprika.
Dip cauliflower into egg mixture; coat with bread crumb mixture.
Fry 8 to 10 flowerets at a time in hot oil, turning occasionally, until golden brown, about 2 minutes.
Drain on paper towels.
Keep warm in 200° oven 10 to 15 minutes.
