|Onion||1 Large, diced|
|Cheddar cheese||1⁄4 Cup (4 tbs), grated|
Remove outer leaves and stalks from cauliflower.
Separate into flowerets.
Place in glass dish and microwave for 7 to 8 minutes on high or until cauliflower is tender.
Put oil in a 1-quart casserole.
Cook, uncovered, for about 4 minutes, on high or until onions are limp and tender.
Stir once or twice during cooking period.
Add salt, pepper, and bread crumbs.
Drain cauliflower and leave in original casserole.
Top with hot onion mixture.
Sprinkle cheese over top.
Microwave on high, uncovered, for 1 1/2 to 2 minutes, or until cheese is melted and cauliflower is piping hot.
