Cauliflower With Cheese
|Cauliflower/2 small cauliflower||1 Large|
|Milk||1 Cup (16 tbs), heated (Heated Not Boiled)|
|Grated american cheese||1⁄2 Cup (8 tbs)|
Boil the cauliflower until tender.
Make a cream sauce as follows: Put the butter or oleomargarine to melt in a pot, stir in the flour until smooth, then pour the milk in gradually, stirring well. (Canned evaporated milk may be used instead of fresh milk.)
Stir the milk in over a low fire until the sauce is thick.
Add 2 tablespoons grated cheese and salt and pepper.
Cover the bottom of a Pyrex dish with grated cheese, take the cauliflower apart and arrange the flowerets in the dish, then cover with sauce and sprinkle liberally with remaining grated cheese.
Bake in a 350° oven until cheese is lightly browned on top.
