  Cat fish fillets 1 Pound (U.S. Farm-Raised)
  Garlic 3 Clove (15 gm), minced
  Lime 1 Teaspoon, finely shredded
  Lime juice 2 Tablespoon
  Sugar 1 Teaspoon
  Onion 1 Medium, chopped
  Cooking oil 2 Tablespoon
  Coconut cream 1 Cup (16 tbs)
  Natural peanut butter 1 Cup (16 tbs)
  Milk 1⁄2 Cup (8 tbs)
  Finely shredded lime peel 1 Teaspoon
  Brown sugar 1 Tablespoon
  Soy sauce 2 Teaspoon
  Curry powder 1⁄2 Teaspoon
  Ground red pepper 1⁄2 Teaspoon
  Ground cinnamon 1⁄2 Teaspoon

Cut catfish into bite size pieces.
For the marinade, in a shallow baking dish or pie plate stir together oil, garlic, lime peel; lime juice, curry powder, sugar, soy sauce and red pepper.
Add tartfish, stirring and tossing until! well coated.
Cover and chill for 1 hour.
Transfer catfish to a Baking sheet.
Bake in a 350 degrees F oven for 20 minutes or until fish flakes easily.
Serve with Spicy Peanut Sauce and cooked rice.
Spicy Peanut Sauce: In a lg.skillet cook the onion, in oil until tender.
Stir in the remaining ingredients.
Cook over low heat for 5 minutes or until desired consistency.
