Fried Catfish And Buttermilk Hushpuppies

Yumm...fried catfish and hushpuppies a wonderful combination that is a wonderful way to pamper your tastebuds. Master the art of entertaining with this great tasting recipe.
  Yellow corn meal 1 1⁄2 Cup (24 tbs)
  Flour 1⁄2 Cup (8 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Red onion 1⁄4 Cup (4 tbs), finely chopped
  Red bell peppers 1⁄4 Cup (4 tbs), finely chopped
  Jalapeno 1 Teaspoon, finely minced
  Cayenne pepper 1⁄8 Teaspoon
  Eggs 2 , beaten
  Buttermilk 1⁄2 Cup (8 tbs)
  Water 1⁄2 Cup (8 tbs)
  Hot sauce 1 1⁄2 Teaspoon

Mix all the wet ingredients together and add to the bowl of dry ingredients. Mix well. Let sit for 10-15 minutes. Scoop the batter into the fryer and deep fry. Drain and set aside.

Take 2 lbs of catfish and cut the fillets into manageable sizes. Take another bowl and add in it 1 ½ cups of flour, 1 tbsp of Cajun seasoning, 1 to 1 ½ tsp salt and mix well. Coat the cat fish slices with the flour mixture. Deep fry at a temperature of 360 to 375 degrees for approximately 8 minutes. Drain and keep aside.

Serve the fried catfish and hush puppies with tartar sauce.
