Oven Fried Catfish
|French bread slice||6 , cubed (1 Inch Slices)|
|Fat free mayonnaise||1⁄4 Cup (4 tbs)|
|Water||4 Teaspoon (1 Tablespoon Plus 1 Teaspoon)|
|Dressed catfish||24 Ounce (8 Of 6 Ounce Each)|
|Vegetable cooking spray||1|
Position knife blade in food processor bowl; add bread cubes.
Process 30 seconds or until breadcrumbs are fine.
Sprinkle breadcrumbs onto an ungreased baking sheet; bake at 350° for 5 to 7 minutes or until lightly browned.
Place breadcrumbs in a shallow bowl; set aside.
Combine mayonnaise and water; stir well.
Dip fish in mayonnaise mixture; dredge in breadcrumbs.
Place fish on a baking sheet coated with cooking spray.
Bake at 450° for 15 to 17 minutes or until fish flakes easily when tested with a fork.
Transfer fish to individual serving plates.
If desired, garnish with lemon wedges and fresh parsley sprigs.
