Fried Catfish Home Style
|Bacon drippings/Lard||1⁄4 Cup (4 tbs)|
|Lemon||1 , juiced|
|Chopped parsley||1⁄4 Cup (4 tbs)|
Clean and skin catfish and pat dry.
Sprinkle with salt and pepper.
Saute in hot bacon drippings or lard over moderate heat until browned on both sides.
Drain fish on paper towels and place on hot serving dish.
Sprinkle with lemon juice and parsley.
