Fried Catfish Fillets
|Skinned catfish fillets||2 Pound (Fresh Or Frozen)|
|Eggs||2 , beaten|
|Cornmeal||1 1⁄2 Cup (24 tbs)|
|Vegetable oil||1 Tablespoon (Hot)|
Thaw frozen fish.
Cut fish into serving-size portions; season with salt and pepper.
Combine eggs and milk.
Dip fish in egg mixture, then in cornmeal.
Place in single layer in hot oil in a 10-inch skillet; fry over medium heat for 7 to 8 minutes.
