Coated Catfish

Ingredients
  Dressed catfish 4 Pound (Fresh / Frozen, 8 In Number, 1/2 Pound Each)
  Oil 4 Tablespoon (for shallow frying)
  Eggs 2
  Water 2 Teaspoon
  Instant mashed potatoes 2 Cup (32 tbs)
  Onion salad dressing mix 6 Ounce (2 Envelopes, 3 Ounce Each)
  Salt To Taste
  Pepper To Taste
Directions

Thaw frozen fish.
Season with salt and pepper.
Combine eggs and water.
Mix potato flakes and dressing mix.
Dip fish into egg mixture, then roll in potato mixture; repeat.
Brown fish in hot oil on one side for 4 to 5 minutes.
Turn gently; brown on other side 4 to 5 minutes until fish is golden and flakes easily.
