Sweet Potato Casserole
|Canned sweet potatoes||2 Pound (Drained)|
|Canned crushed pineapple||8 Ounce (Drained)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Brown sugar||1⁄4 Cup (4 tbs), firmly packed|
|Butter/Margarine||2 Tablespoon, melted|
|Miniature marshmallows||1 1⁄2 Cup (24 tbs)|
Mash potatoes in a 2 qt.glass casserole dish.
Add remaining ingredients except marshmallows.
Stir until well blended.
Cover and microwave 5 to 7 minutes, stirring once during cooking.
Sprinkle marshmallows over top and microwave, uncovered, 2 to 3 minutes.
