Bacon Summer Squash Casserole
|Summer squash||4 Small, cut into cubes|
|Chopped onion||1⁄3 Cup (5.33 tbs)|
|Chopped green pepper||1⁄4 Cup (4 tbs)|
|Tomato||1 Small, chopped|
|Herb seasoned stuffing mix||2 Cup (32 tbs)|
|Egg||1 , beaten|
|Black pepper||1⁄4 Teaspoon|
|Shredded cheddar cheese||1⁄2 Cup (8 tbs)|
Place bacon in a 2 qt.glass casserole dish.
Cover and microwave 4 minutes 30 seconds to 6 minutes.
Remove bacon, crumble and set aside.
Add squash, onion and green pepper to bacon drippings.
Cover and microwave 12 to 14 minutes or until tender.
Drain and reserve liquid.Combine tomato, stuffing, egg, spices and reserved liquid.
Layer over top of squash.
Cover and microwave 8 to 10 minutes.
Give dish a 1/2 turn during cooking.
Top with crumbled bacon and cheese.
Microwave 30 seconds to 1 minute [ROASTS, 1 minute] or until cheese softens.
