Vegetable Casserole (Vegetali Al Forno)

Ingredients
  Eggplant 1 , sliced
  Onions 2 , sliced
  Zucchini 3 , sliced
  Green peppers 2 , chopped
  Tomatoes 6 , peeled and sliced
  Olive oil 1⁄2 Cup (8 tbs) (125 Milliliter)
  Garlic 1 Clove (5 gm), crushed
  Mozzarella 1⁄2 Pound (250 Gram)
  Cheese 4 Tablespoon, grated (Adjust Quantity As Needed)
  Chopped basil 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Place layers of the vegetables in an oiled baking dish.
Mix the garlic with the oil and sprinkle over the vegetables.
Season to taste with salt and pepper.
Sprinkle with Mozzarella cheese and chopped basil.
