Kidney Casserole

Ingredients
  Beef kidney 1 , sliced
  Whole wheat flour 3 Tablespoon
  Oil 3 Tablespoon
  Tomatoes 1 Quart, stewed
  Salt 1 Teaspoon
  Nutritional yeast 3 Tablespoon
  Tarragon 1⁄2 Teaspoon
  Honey 1 Teaspoon
  Bay leaf 1
  Celery seeds 1⁄4 Teaspoon
  Parsley 1 Tablespoon, minced
  Onion 1 , grated
  Garlic 1 Clove (5 gm), minced
  Cinnamon 1⁄4 Teaspoon, ground
  Green pepper 1 , minced
  Celery leaves 1⁄2 Cup (8 tbs), chopped
  Mushrooms 1⁄4 Cup (4 tbs), sliced
  Soy grits 1⁄4 Cup (4 tbs), soaked in 0.25 cup stock
Directions

Dredge kidney in flour and saute in oil.
Put in oiled casserole.
Combine remaining ingredients and pour over kidney.
Cover.
Bake at 250° F. for about 1 1/2 hours, until kidney is tender.
