Cold Vegetable Casserole

Ingredients
  Mushrooms 1 Cup (16 tbs), sliced
  Onions 2 , sliced
  Oil 3 Tablespoon
  Eggs 2 , beaten
  Nuts 1⁄2 Cup (8 tbs), ground
  Vegetables 1 Cup (16 tbs), cooked and diced
  Salt 1⁄2 Teaspoon
  Brown rice 1 Cup (16 tbs), cooked
  Whole wheat bread crumbs 1⁄2 Cup (8 tbs)
  Grits 1⁄4 Cup (4 tbs), soaked in 0.25 cup stock
  Nutritional yeast 3 Tablespoon
  Nutmeg 1 Pinch, ground
  Savory 1 Teaspoon
Directions

Saute mushrooms and onions in oil.
Blend with remaining ingredients.
Turn into oiled casserole.
Bake at 375° F. for 30 minutes.
Cool, then chill.
When cold, this casserole can be sliced.
