Cheesy Egg Casserole
|All purpose flour||1⁄4 Cup (4 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs), melted|
|Egg||4 , beaten|
|Cottage cheese||1 Cup (16 tbs)|
|Canned chopped green chilies||4 Ounce (Drained)|
|Monterey jack cheese||16 Ounce, shredded|
|Green pepper||To Taste|
Combine flour, salt, and butter in a large bowl.
Add eggs, cottage cheese, chiles, and cheese, mix well.
Pour mixture into a lightly greased 10 x 6 x 2-inch baking dish.
Garnish casserole with pimientos and green pepper.
Bake, uncovered, at 375Â° for 30 minutes.
