Scallop Casserole

Ingredients
  Scallops 1 Pound
  Mashed potato 1 Pound
  Processed american cheese 6 Ounce
  Egg 1
  Canned chopped mushrooms 3 Ounce
  Snipped chives 2 Tablespoon
  Pepper 1 Dash
  Tomatoes 2
Directions

Thaw frozen scallops.
Cook scallops 1 minute in boiling, salted water.
Drain; cut large scallops in half.
Prepare potatoes according to package directions except reduce water by 1/3 cup.
Combine the hot potatoes and / cup cheese, stirring till cheese melts.
Beat in egg.
Add mushrooms, chives, dash pepper, and scallops.
Turn into 10x6x1 3/4-inch baking dish.
Arrange tomatoes atop potato mixture.
Sprinkle with remaining cheese.
Bake at 350° till heated through, 15 to 20 minutes.
