Amber Rice Casserole

Ingredients
  Rice 1⁄2 Cup (8 tbs)
  Orange juice 1⁄2 Cup (8 tbs)
  Salt 1 1⁄8 Teaspoon
  Carrots 3 Medium, grated
  Cheese 1 1⁄2 Cup (24 tbs), grated
  Eggs 2 , beaten
  Pepper 1⁄8 Teaspoon
  Onion 2 Tablespoon, chopped
  Milk 1⁄3 Cup (5.33 tbs)
  Parsley flakes 1 Teaspoon, dried
  Cayenne pepper To Taste
Directions

Combine rice, orange juice, 1 cup water and salt in saucepan; cook for 20 minutes or until rice is tender.
Place carrots in 1-quart casserole.
Blend in rice mixture and all remaining ingredients.
Bake at 350 degrees for 40 minutes.
