|Milk||1 Cup (16 tbs)|
|Ground cooked ham||1 Cup (16 tbs)|
|Carrots||1⁄4 Cup (4 tbs), grated|
|Celery||1⁄8 Cup (2 tbs), minced|
|Parsley flakes||1 Tablespoon|
|Eggs||3 , separated|
Melt butter in saucepan; stir in flour until smooth.
Add milk gradually, stirring constantly until smooth and thickened.
Add ham, carrots, celery, parsley and salt to sauce.
Beat egg yolks slightly.
Add small amount of sauce to yolks; stir well.
Return mixture to sauce; blend until smooth.
Beat egg whites until stiff peaks form; fold into ham mixture.
Spoon mix- ture into ungreased 1 1/2-quart baking dish.
Place dish in shallow pan of water.
Bake at 300 degrees for 1 hour.
