Hominy Luncheon Dish
|Ground beef||3⁄4 Pound|
|Minced onion||1⁄4 Cup (4 tbs)|
|Chili powder||1 Teaspoon|
|Yellow cornmeal||1 Tablespoon|
|Canned tomatoes||2 Cup (32 tbs)|
|Canned hominy||25 Ounce, drained|
|Grated cheddar cheese||1 Cup (16 tbs)|
Brown beef and onion in skillet; add paprika, chili powder, sugar, cornmeal and salt.
Add tomatoes to beef mixture; stir well.
Simmer for several min- utes.
Place hominy in greased casserole; pour mix- ture over.
Top with grated cheese.
Bake at 350 de- grees until cheese is melted and browned slightly.
