Eggplant Casserole

Ingredients
  Eggplant 1 , peeled and cut into thick chunks
  Tomatoes 4 , peeled and cut into quarters
  Green pepper 1 , diced
  Yellow squash 1 , diced
  Onion 1 , diced
  Celery salt 1 Teaspoon
  Brown sugar 1 Teaspoon
  Garlic powder 1⁄8 Teaspoon
  Lite line cheese slices 5
Directions

GETTING READY
1) Preheat oven to 400° F.

MAKING
2) Take a 2 quart non-stick casserole and combine all the ingredients in it.
3) Bake, covered, for about 45 - 60 minutes or until vegetables get tender.
4) Arrange the cheese slices on top of casserole and return to the oven. Bake for about 5 minutes or more.

SERVING
5) Remove from the oven and serve hot.
