Eggplant Sausage Casserole

Ingredients
  Eggplants 2
  Salt 3⁄4 Teaspoon
  Vegetable oil 3 Tablespoon
  Pork sausage 1 Pound
  Thinly sliced onion 1⁄2 Cup (8 tbs)
  Grated parmesan 3⁄4 Cup (12 tbs), divided
  Chopped parsley 2 Tablespoon
  Dried whole oregano 1⁄2 Teaspoon
  Tomatoes 3 , peeled and sliced
  Salt 1⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Breadcrumbs 2 Tablespoon
  Butter 2 Tablespoon
Directions

GETTING READY
1) Using a peeler, peel the egg plant
2) Using a sharp knife, slice the egg plant into 1/3 inch slices
3) Sprinkle in salt onto the slices and allow to drain onto kitchen towels for about 30 minutes
4) Into a skillet, add in some oil and allow to heat up
5) Slowly add in the slices and fry till browned
6) Place the slices onto absorbent kitchen towels to drain the excess oil
7) Into a skillet, saute the onion and the sausage till browned
8) Pour out the excess drippings
9) Into a bowl, combine the parmesan cheese, parsley and the oregano and keep aside
10) Onto the tomato slices, sprinkle in salt and pepper
11) Into a 2 quart casserole, layer first the egg plant, followed by the sausage mixture, the cheese mixture and lastly the tomato slices
12) Cover the top with the rest of the grate parmesan Cheese
13) Bake in the oven at 375 F for 45 minutes
