Auvergne Lentil Casserole

Ingredients
  Continental lentils 12 Ounce, washed and picked
  Onion 3 , peeled
  Carrot 2 , scraped and sliced
  Parsnips 2 , peeled and sliced
  Leeks 2 , trimmed, washed, sliced
  Bouquet garni 1
  Salt To Taste
  Ground black pepper To Taste
  Lean pork 12 Ounce
  Potatoes 12 Ounce, peeled and chopped
  Stock 3⁄4 Pint
  Sausage salami 8 Ounce (Small Ones)
  Paprika 1⁄2 Teaspoon
Directions

MAKING
1) Into a flame-proof casserole, add in the lentils. Pour enough cold water to cover the lentils. Let the water boil. Then cover the casserole and simmer for 30 minutes.
2) Add the onions, carrots, leek and parsnips into the casserole. Drop in the bouquet garni. Cook for about 30 minutes while stirring often.
3) Sprinkle salt and pepper. Mix well.
4) Slice the pork into little pieces. Add in the pork and potatoes into a pan along with 1/2 pint of stock. Cook for 30 more minutes.
If needed, add more stock.
5) Fish out the bouquet garni.
6) Skin the salami, grill and slice thick.

SERVING
7) Serve the Average Lentil Casserole with the salami slices arranged on top.
