Armenian Lamb Casserole

Ingredients
  Lean lamb 1 Pound, cut in 1 inch cubes
  Oil 2 Tablespoon
  Onion 1 , sliced
  Garlic 1 Clove (5 gm), minced
  Canned tomatoes 1 Cup (16 tbs)
  Green pepper To Taste
  Carrots 2 , sliced
  Lemon slices 3
  Eggplant 1 Medium, cut in 2 inch cubes
  Zucchini 2 , cut in 1 inch cubes
  Paprika 1⁄2 Teaspoon
  Cumin 1⁄8 Teaspoon
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Okra 1⁄2 Cup (8 tbs), sliced
Directions

GETTING READY
1. Preheat the oven to 350°F.

MAKING
2. In a skillet heat the oil, brown the lamb cubes, add onions and garlic and brown slightly.
3. Add the tomatoes and cook over low heat for 1 hour, adding a small amount of water, if necessary.
4. To a large porcelain-coated or glass casserole transfer the meat mixture, add all remaining ingredients and bring to a boil on top of the stove.
5. Cover tightly, place in oven and bake 1 hour such that vegetables are tender.

SERVING
6. Serve hot with desired garnish.

TIP
Adding vegetables to plain cast iron will discolor the vegetables.
