Vegetarian Broccoli Casserole
|Vegetable cooking spray||1|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Chopped red bell pepper||1⁄3 Cup (5.33 tbs)|
|Cream of broccoli with cheddar and onion condensed soup||1 Can (10 oz) (Healthy Choice)|
|Fat free sour cream||1⁄4 Cup (4 tbs)|
|Frozen chopped broccoli||10 Ounce, thawed and drained (1 Package)|
|Cooked rice||2 Cup (32 tbs)|
|Tomato||1 , cut into 1/4-inch slices|
In large skillet sprayed with vegetable cooking spray, saute onion, celery and pepper until crisp-tender.
Stir in soup and sour cream.
In 1 1/2-quart baking dish sprayed with vegetable cooking spray, layer broccoli and rice.
Top rice with soup mixture, spreading evenly.
Cover and bake at 350°F 20 minutes.
Top with tomato slices; bake, uncovered, 10 minutes.
