Savory Bean Casserole

Ingredients
  Dried beans 1 Pound, drained and washed
  Water 6 Cup (96 tbs)
  Bay leaf 1
  Garlic 2 Clove (10 gm)
  Salt 2 Teaspoon
  Canned pimientos 4 Ounce, drained and chopped (1 Can)
  Green pepper 1 Large, minced
  Green onions 1⁄4 Pound, minced (1 Bunch)
  Cooking oil/Olive oil 1⁄2 Cup (8 tbs)
  Garlic 1 Clove (5 gm), mashed
  Wine vinegar 1⁄4 Cup (4 tbs)
  Frankfurters 1 Pound
  Minced parsley 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Cover beans with water.
Bring to boil and boil for 2 minutes.
Cover and let stand for 1 hour.
Add bay leaf, garlic cloves, and salt; simmer until tender; drain.
Combine pimientos, green pepper; onions, oil, mashed garlic, and vinegar and mix with drained beans.
Season to taste with salt and pepper.
Put in 2 1/2-quart casserole.
Top with frankfurters and bake, covered, in preheated hot oven (400°F.) for about 15 minutes.
Sprinkle with minced parsley.
Makes 8 servings.
