Zucchini Casserole

Ingredients
  Ground beef 1 Pound, browned, drained
  Onions 4 Cup (64 tbs), chopped
  Green peppers 4 Cup (64 tbs), chopped
  Zucchini 2 Cup (32 tbs), chopped or diced (1 Inch)
  Tomatoes 4 , peeled and cut in wedges
  Cheese 1⁄2 Cup (8 tbs)
  Cracker crumbs 1⁄2 Cup (8 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Brown onions and peppers with oleo until light brown then add zucchini.
Cook for 5 minutes, then add tomatoes and cook 5 more minutes.Add beef.
Season.
Pour into baking dish and top with cheese and buttered cracker crumbs.
Bake at 325 degrees for 30 minutes.
