Sherry Flavored Sweet Potato Casserole

Ingredients
  Sweet potatoes 4 Large, peeled
  Vegetable stock/Water 1 Cup (16 tbs)
  Butter/Margarine 2 Ounce (60 Gram)
  Canned crushed pineapple 7 Ounce, drained (220 Gram)
  Sweet sherry 2 Tablespoon
  Ground cinnamon 1⁄2 Teaspoon
  Ground nutmeg 1⁄4 Teaspoon
  Seasonings To Taste
Directions

Preheat oven to 180°C (350°F) .
Boil sweet potatoes in vegetable stock until tender.
Drain well.
Mash with butter.
Stir in all remaining ingredients.
Spoon into a casserole dish.
Bake for 15 minutes.
