Cheese Chicken and Cauliflower Casserole
|Onion||1 , thin sliced|
|Green pepper||To Taste, coarsely chopped|
|Diced celery||1⁄3 Cup (5.33 tbs)|
|All purpose flour||3 Tablespoon|
|Milk||2 Cup (32 tbs)|
|Carrots||2 , thin sliced|
|Chopped parsley||1 Tablespoon|
|Cooked chicken||1 1⁄2 Cup (24 tbs)|
|Cauliflower||1 Small, separated into flowerets and cooked|
|Swiss cheese||1⁄2 Pound, sliced|
Saute onion, pepper, and celery in butter until tender.
Stir in flour, then gradually add milk and cook over low heat until smooth and slightly thickened.
Add carrots, parsley, chicken, and seasonings and simmer for 15 minutes.
Stir this mixture occasionally.
Place in a shallow casserole.
Top with cheese slices.
Bake in preheated moderate oven (350° F.) until cheese is melted, about 15 minutes.
