Pork Chop Sweet Potato Casserole

Ingredients
  Thick pork loin chops 2 , trimmed of excess fat
  Sweet potatoes 4 Small, cut into 1/4 inch
  Butter 1 Tablespoon
  Salt 3⁄4 Tablespoon
  Coarsely ground black pepper To Taste
  Cooking apple 1 Large, peeled, quartered, cored and sliced
  Onions 2 Medium, sliced
  Light brown sugar 1 Tablespoon
  Lemon 1 , peel grated and the juice strained
  Hot water 1 Tablespoon
Directions

Preheat the oven to 350° F. [180° C.].
Butter a 1-quart [1-liter] baking dish and put in the sweet potatoes.
Dot with butter and sprinkle with the salt and a dash of pepper.
Make a layer of the apple and onion slices on top.
Combine the brown sugar with the lemon juice and peel, and spread the mixture over the apples and onions.
Add the hot water and then the pork chops.
Cover the dish and bake until the chops are very tender, or for about one and a half hours.
Remove the cover for the last 30 minutes to brown the chops.
