Cheesy Grits Casserole

  Sliced scallions 1 Cup (16 tbs)
  Minced garlic 1 Teaspoon
  Defatted reduced sodium chicken broth 1 1⁄2 Cup (24 tbs)
  1% low fat milk 1 1⁄2 Cup (24 tbs)
  Quick cooking white grits 3⁄4 Cup (12 tbs)
  Egg yolk 1
  Shredded reduced fat cheddar cheese 3⁄4 Cup (12 tbs)
  Hot pepper sauce 1⁄2 Teaspoon
  Ground black pepper 1⁄4 Teaspoon
  Egg whites 5

Preheat oven to 375°F.
Coat a 2-quart baking dish with no-stick spray.
Coat a medium no-stick skillet with no-stick spray and place over medium heat.
Add the scallions and garlic.
Cook and stir for 1 to 2 minutes, or until softened.
Remove from the heat.
In a medium saucepan, combine the broth and milk.
Bring to a boil over medium heat.
Slowly stir in the grits.
Cook, stirring often, for 8 to 12 minutes, or until thickened.
Place the egg yolk in a small bowl and whisk lightly.
Gradually whisk in 1 cup of the grits, then whisk the mixture back into the saucepan.
Stir in the Cheddar, hot-pepper sauce, black pepper, and scallions.
Remove from the heat.
Let cool for 10 minutes.
Place the egg whites in a medium bowl.
Using an electric mixer, beat on medium speed until firm and glossy.
Fold into the grits.
Spoon into the prepared baking dish and bake for 40 to 45 minutes, or until golden and set.
