Sweet Potato Casserole

Ingredients
  Sweet potatoes 2 1⁄2 Pound, peeled, cooked and cut into irregular shaped pieces
  Packed brown sugar 1⁄2 Cup (8 tbs)
  Butter/Margarine 2 Tablespoon
  Cornstarch 1 1⁄2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Orange juice 1 Cup (16 tbs) (Prepared)
Directions

Cut potatoes into bite size pieces and place in 2 quart (2 L) casserole.
Mix remaining ingredients in saucepan.
Heat and stir until it boils and thickens.
Pour over potatoes.
Cover and bake in 350°F (180°C) oven for 20 minutes.
Remove cover for last few minutes if desired.
