Sweet Potato Casserole
|Sweet potatoes||2 1⁄2 Pound, peeled, cooked and cut into irregular shaped pieces|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Cornstarch||1 1⁄2 Tablespoon|
|Orange juice||1 Cup (16 tbs) (Prepared)|
Cut potatoes into bite size pieces and place in 2 quart (2 L) casserole.
Mix remaining ingredients in saucepan.
Heat and stir until it boils and thickens.
Pour over potatoes.
Cover and bake in 350°F (180°C) oven for 20 minutes.
Remove cover for last few minutes if desired.
