Sweet Pepper Casserole
|Onions||1 Pound, chopped, peeled|
|Green pepper||1 , seeded and cut into strips|
|Canned tomatoes||14 Ounce|
|Caster sugar||1⁄2 Teaspoon|
|Chicken stock cube||1|
|Freshly ground black pepper||To Taste|
|New potatoes||4 , peeled, sliced in rounds|
Place the cutlets under a hot grill for 5 minutes, turning once.
Place in a casserole and keep hot.
To make the sauce, fry the onions in the butter and oil until transparent.
Add the pepper, tomatoes, sugar and the stock cube, dissolved in 150 ml (1/2 pint) boiling water, and seasoning.
Add to the casserole with the potatoes, cover and place in a moderate oven for 30 minutes.
Taste and adjust the seasoning.
Serve with new potatoes and sliced green beans.
