Broccoli with Fresh Mushrooms
|Salad oil||2 Tablespoon|
|Broccoli||1 Pound, cut in small flowerets, with thick stems cut in 1/8-inch slices|
|Mushrooms||1⁄2 Pound, cut in 1/4-inch slices|
|Green onions||2 Small, finely chopped|
|Ground nutmeg||1⁄4 Teaspoon|
Place wok over high heat.
When wok is hot, add 1 tablespoon of the oil.
When oil is hot, add broccoli, sugar, and salt; stir-fry for 1 minute.
Add water, cover and cook, stirring frequently, until broccoli is tender-crisp (about 3 minutes), adding more water, if needed; remove from wok and set aside.
Add remaining 1 tablespoon oil.
When oil is hot, add mushrooms, onions, and nutmeg; stir-fry until liquid evaporates (about 3 minutes).
Return broccoli to wok and stir to heat through.
