Sweet Potato and Fruit Casserole
|Cooked sweet potatoes||4|
|Fruit||1 1⁄2 Cup (24 tbs), diced (Raw Cranberries, Chopped Apples, Diced Bananas, Or Oranges)|
|Brown sugar||2 Tablespoon (4 If Cranberries Are Used)|
1. Start oven, set at 350° F., Moderate. Rub a casserole with butter or margarine.
2. Drain the potatoes, peel and slice length wise.
3. Arrange a layer of the slices in the greased casserole. Top with a layer of fruit. Mix sugar and salt and sprinkle over the fruit. Dot with butter or margarine. Continue until all ingredients are used. If bananas are used, pour 1/4 cup boiling water into the dish.
4. Bake 35 to 40 minutes
