Corn And Courgette Casserole

Ingredients
  Mild olive oil 2 Tablespoon
  Onion 1 Large, chopped
  Red pepper 1 , chopped
  Courgettes 5 , sliced
  Sweetcorn 1 Pound, drained if canned, thawed if frozen (500 Gram, Canned / Frozen)
  Ripe tomatoes 3 , chopped
  Passata/Pureed tomatoes 4 Fluid Ounce (125 Milliliter)
  Vegetable stock 1 3⁄4 Pint (1 Liter)
Directions

1. Heat oil in a large, deep frying pan. Add onion and red pepper and fry for 5 minutes over moderate heat, stirring occasionally. Add courgettes, sweetcorn, tomatoes and passata. Simmer for 15 minutes.
2. Add stock, bring to boil, then lower heat and simmer mixture for 25 minutes. Serve hot.
