Mashed Potato Casserole
|Potatoes||2 1⁄2 Pound (5 Large Ones)|
|Cream cheese||3 Ounce, cut up (1 Package)|
|Milk||1 Cup (16 tbs)|
|Butter/Regular margarine||5 Tablespoon|
|Chopped chives||1 Tablespoon (Fresh / Dried)|
Wash potatoes thoroughly.
Prick each potato several times with cooking fork.
Arrange potatoes in ring, 1" apart, on paper towel in microwave oven.
Microwave at high setting 8 minutes.
Turn potatoes over and rearrange in ring.
Microwave at high setting 7 to 9 minutes more, or until tender.
Let stand on wooden board or heatproof surface 5 minutes.
Peel potatoes and force through ricer.
Add cream cheese, milk, 4 tblsp. of the butter, chives, salt and pepper to potatoes; mix well.
Spoon potato mixture into greased 8" square glass baking dish.
Dot with remaining 1 tblsp. butter and sprinkle with paprika.
Microwave at medium setting (50 percent power) 18 to 20 minutes, or until hot, rotating dish one-quarter turn every 5 minutes.
