New England Fish Casserole

  Bacon slices 4 , cut into 1 inch strips
  All purpose potatoes 3 Medium, peeled and cut into 1/4-inch dice
  Sweet green pepper 1 Medium, cored, seeded, and cut into 1/4-inch dice
  Cod fillets/Scrod 1 Pound, cut into 1 inch pieces
  Water 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Black pepper 1⁄4 Teaspoon

1. Preheat the oven to 450°F. Cook the bacon in a 1-quart saucepan over moderate heat for 3 minutes. Add the potatoes and green pepper, and cook, uncovered, for 5 minutes, stirring often.
2. Transfer the mixture to an ungreased 1 1/2-quart casserole, and stir in the fish fillets, water, salt, and black pepper. Bake, covered, for 8 to 10 minutes, depending on the thickness of the fish. When the fish flakes easily when tested with a fork, it is done.
