Curried Beef Casserole
|Butter/Margarine||4 Tablespoon (1/2 Stick)|
|Yellow onion||1 Large, peeled and finely chopped|
|White bread slice||2|
|Milk||3⁄4 Cup (12 tbs)|
|Lean ground beef||1 Pound|
|Raisins||1⁄8 Cup (2 tbs)|
|Chopped almonds||1⁄2 Cup (8 tbs)|
|Apricot preserves||2 Tablespoon|
|Lemon juice||3 Tablespoon|
|Curry powder||1 Tablespoon|
|Dried oregano||1⁄8 Teaspoon, crumbled|
|Black pepper||1⁄8 Teaspoon|
1. Preheat the oven to 325°F. Melt the butter in a heavy 9- or 10-inch skillet over moderate heat. Add the onion, and cook, uncovered, for 5 minutes, or until soft. Meanwhile, soak the bread in 1/4 cup of the milk.
2. When the onion is done, add the bread, beef, raisins, almonds, preserves, lemon juice, curry powder, oregano, salt, and pepper. Cook for 5 minutes, stirring constantly. Transfer the mixture to a buttered 8"x8"x2" baking dish.
3. In a small bowl, beat the remaining 1/2 cup of milk with the egg, and pour over the beef mixture in the baking dish. Bake, uncovered, for 20 minutes. Spoon the fat from the top of the dish and serve.
