Hot Fruit Casserole

This recipes is for a hot casserole of dried fruits. It is sweet and tangy due to some of the dried fruits included such as apricots. It has one of those great crispy macaroon-based cookie toppings on it. It is served as an accompaniment to the main meal.
  Mothers macaroon cookies 100 Gram (Cookie Section)
  Pineapple chunks 3 Can (30 oz) (In Its Own Juice)
  Peach 3 Can (30 oz)
  Pear slice 3 Can (30 oz) (In Its Own Juice)
  Dried apricots 100 Gram
  Sliced almonds/Slivered almonds 1 Large (Flat Ones)
  Dry sherry 1 Tablespoon
  Brown sugar 2 Tablespoon
  Melted margarine 1⁄4 Cup (4 tbs)
  Frozen pitted black cherries 100 Gram (Thawed)

Grease pyrex well
Process cookies into crumbs
Drain all fruit well
Mix all fruits together in a bowl
Cover bottom of Pyrex dish with some a layer of cookie crumbs (don't use all crumbs--save for other layers)
Cover crumbs with one layer of mixed fruit
Cover fruit layer with crumbs layer
Cover crumbs again with layer of fruit
End with a layer of cookies crumbs (This would equal 2 layers of fruit, 3 layers of cookie crumbs)
Note: You can assemble fruit and crumbs the day before and refrigerate if you don't want to save time the day you serve it.
Cover top layer of cookie crumbs with almonds
Drizzle Dry Sherry over top layer
Sprinkle Brown Sugar over top layer until covered lightly
Bake at 350 degrees for 30-45 minutes
Then drizzle 1/4 cup of Melted Margarine over the top
Finish baking another 15 minutes
Total baking time is 45 minutes to 1 hour
Top should be lightly browned. If getting too brown during last 15 minutes lightly cover with foil.

This is a wonderful family favorite that my mother-in-law makes at all of her holiday gatherings. Everyone loves this recipe. My mother-in-law usually serves it buffet-style alongside the main course. A nice simple chicken dish goes great with it as the dish can be filling. It is one of those dishes you can't stop eating and people will definately go back for seconds if you make this. It is extremely easy to make.
