Zucchini And Tomato Casserole
|Zucchini||1⁄2 Pound (2 Medium Size)|
|Onion||1 Small, chopped to make 1/4 cup|
|Chopped fresh thyme/1/4 teaspoon dried thyme||1 Teaspoon|
|Tomato||1 Medium, sliced|
|Shredded cheddar cheese||1⁄2 Cup (8 tbs)|
|Herb seasoned stuffing mix||1⁄2 Cup (8 tbs)|
1. Prepare zucchini for Summer Squash, cutting into slices. Mix zucchini, onion, thyme and pepper in 1 1/2-quart casserole. Cover tightly and microwave on high 4 to 6 minutes, stirring after 3 minutes, until zucchini is almost tender.
2. Arrange tomato on zucchini mixture. Cover tightly and microwave 1 to 2 minutes or until tomato is hot. Sprinkle with cheese and stuffing mix. Microwave uncovered about 30 seconds or until cheese is melted.
