Baked Beef And Lima Bean Casserole
|Dried large lima beans||1 Cup (16 tbs)|
|Bacon drippings||2 Tablespoon|
|Ground beef||1 Pound|
|Onions||2 , chopped|
|Canned tomatoes||2 Cup (32 tbs)|
Place the beans in a saucepan and cover with water.
Add 1 cup water and cook until tender.
Heat the bacon drippings in a skillet.
Add ground beef and cook until brown, stirring occasionally.
Stir in the flour, salt and pepper and cook, stirring, for 8 minutes.
Place alternate layers of beef mixture, beans and tomatoes in a casserole and add 1 1/2 cups water.
Bake at 325 degrees for 2 hours, adding water, if needed.
