|All-purpose potatoes||2 Medium, peeled and thinly sliced|
|Yellow onion||1 Medium, peeled and thinly sliced|
|Carrot||1 Large, peeled and thinly sliced|
|Dried basil||1 Teaspoon, crumbled|
|Fresh tomatoes/1 can of 1 pound tomatoes, chopped, with their juice||3 Medium, peeled and chopped|
|Black pepper||1⁄8 Teaspoon|
1. Preheat the oven to 400°F. Place the sausage in a heavy 9- or 10-inch skillet over moderate heat, and cook, uncovered, stirring frequently, until browned—about 5 minutes. Pour off
and discard the drippings from the skillet.
2. Layer an ungreased 2-quart casserole with the sausage, potatoes, onion, and carrot. Repeat the layers. Add the basil, tomatoes, salt, and pepper, and bake, covered, for 45 minutes.
