Squash Casserole With Herb Seasoned Topping
|Sliced yellow squash/2 cups mashed canned / frozen||4 Cup (64 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Egg||1 , beaten|
|Skim milk||1⁄3 Cup (5.33 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs), melted|
|Herb seasoned stuffing mix||3⁄4 Cup (12 tbs)|
|Onion||1⁄2 Cup (8 tbs), finely chopped|
|Crushed herb seasoned stuffing mix||1⁄2 Cup (8 tbs)|
|Wheat germ||1 Teaspoon|
|Butter/Margarine||2 Tablespoon, melted|
Place sliced squash and water in a 1 1/2- to 2-quart casserole.
Microwave at HIGH 16 minutes or until tender.
Stir squash once after 8 minutes.
Allow squash to stand while combining remaining ingredients.
Blend together egg, milk, butter, stuffing mix, onion, salt, and pepper.
Stir into bread stuffing mixture.
Microwave at HIGH, uncovered, 8 minutes.
For Topping, combine crushed stuffing mix, wheat germ, and butter.
Sprinkle on the topping mixture.
Microwave at HIGH 5 minutes.
Allow 5 minutes standing time before serving.
