|Eggs||2 , beaten|
|Cottage cheese||1⁄4 Cup (4 tbs)|
|Grated sharp cheddar cheese||1⁄4 Cup (4 tbs)|
|Herb seasoned stuffing mix||1 Cup (16 tbs)|
Pierce package of spinach several times.
Place on paper plate.
Microwave at HIGH for 3 minutes, or until spinach can be separated.
Combine eggs, milk, cottage cheese, Cheddar cheese, salt, stuffing mix, and spinach.
Spread mixture evenly in a greased 1- to 1 1/2 quart glass casserole.
Microwave at HIGH 5 to 7 minutes.
Let stand 2 to 3 minutes before serving.3
