Crusty Sweet Potato Casserole

Ingredients
  Sweet potatoes 6 Medium, cooked
  Salt 1 Teaspoon
  Ground mace 1⁄4 Teaspoon
  Egg 1 , slightly beaten
  Crushed pineapple 1⁄3 Cup (5.33 tbs), drained
  Ground ginger 1⁄8 Teaspoon
  Butter/Margarine 2 Tablespoon
  Orange juice 1 Tablespoon
  Finely chopped unsalted peanuts 1⁄3 Cup (5.33 tbs)
  Flaked coconut 1⁄3 Cup (5.33 tbs)
  Firmly packed brown sugar 2 Tablespoon
Directions

Peel and mash sweet potatoes.
Combine sweet potatoes, salt, mace, egg, pineapple, ginger, butter, and orange juice in a 1 1/2 quart glass casserole.
Microwave at HIGH 5 to 6 minutes.
Combine peanuts, coconut, and brown sugar.
Sprinkle over casserole.
Microwave at HIGH 3 to 4 minutes.
