Beef And Potato Casserole
|Beef dripping||2 Tablespoon|
|Onions||2 Medium, sliced|
|Potatoes||2 Medium, pared and diced|
|Cubed cooked roast beef||2 Cup (32 tbs)|
|Worcestershire sauce||1 Tablespoon|
|Ketchup||1⁄4 Cup (4 tbs)|
|Dry mustard||1⁄2 Teaspoon|
|Water||2 Cup (32 tbs)|
1. Heat drippings in a 2-quart glass casserole in microwave oven (15 to 30 seconds at HIGH).
2. Add onion, potato and paprika to drippings. Cover with an all-glass lid or waxed paper. Cook in microwave oven 3 minutes at HIGH.
3. Add meat to casserole along with Worcestershire sauce, ketchup, dry mustard, salt and pepper; mix. Cook covered in microwave oven 3 minutes at HIGH.
4. Mix about 2 tablespoons of the water with cornstarch. Stir cornstarch mixture and remaining water into casserole mixture. Cover and cook in microwave oven 10 to 12 minutes at HIGH, or until thoroughly heated; stir occasionally.
