Layered Beef Vegetable Casserole
|Beef||1 1⁄2 Pound, ground|
|Onion||1 Cup (16 tbs), sliced|
|Green pepper||1 Cup (16 tbs), chopped|
|Potato||1 Large, sliced (peeled)|
|Carrot||1 Cup (16 tbs), thinly sliced|
|Long grain rice||1⁄3 Cup (5.33 tbs) (uncooked)|
|Tomatoes||28 Ounce, mashed|
1. Preheat oven to 350° F.
2. Saute ground beef, onions, and green pepper together until beef is browned. Drain fat. Add salt; mix well.
3. Place sliced potato in bottom of 2 1/2-quart baking dish.
4. Alternate layers of carrots, rice, and meat.
5. Pour mashed tomatoes over casserole. Cover.
6. Bake for 2 hours.
